The management system ISO 22000: 2018 has been implemented at the Novovolynsk meat-packing plant, which is part of the agro-industrial group “Pan Kurchak”.

ISO 22000: 2018 is a “Food Safety Management System. Requirements for organizations of any food chain. This standard sets out the requirements for the management system in organizations related to the production and consumption of food. It aims to demonstrate their ability to control food safety and ensure that their products are safe for consumers.

At each stage of production, workers monitor compliance with the requirements of the system: from the receipt of raw materials at the enterprise to the shipment of the finished product.

The system works successfully due to clear control of production at each stage and more in-depth at individual stages (so-called control points and critical control points).

The control point is a process that requires more detailed attention to the product. For example, the responsible person, during the reception of raw materials, inspects the vehicle body in detail for the absence of dirt in the middle, checks the compliance of the transport temperature, measures the temperature of the raw material, evaluates its appearance and selects a test sample for detailed laboratory examination.

A critical control point is a stage at which control can be applied and which is necessary to prevent, eliminate or avoid a dangerous factor or bring it to an acceptable level. In other words, if you do not apply control at this stage, there is a high risk that the product will be dangerous.

“For example, when cooking sausages, it is necessary to reach a certain level of temperature in the middle of the product, at which the pathogenic microflora dies. The operator of the heat treatment section starts the cycle of the thermal chamber, monitors the treatment process and, if necessary, can make adjustments. All stages of heat treatment must be recorded in the log with the indicators of loading and unloading time, the temperature in the middle of the product at the end. Thanks to these operations, we can track and make sure that the product has undergone a full cycle of heat treatment and is ready for the next stage according to the technology, ” says Andriy Schwants, Head of Quality, Standardization and Certification of Novovolynsk Meat Plant.

The company constantly monitors compliance with the requirements of the standard. We have recently reconstructed our own car wash, as we need to be sure that the vehicles that will transport the products are clean. The system of training of personnel directly related to production has also been improved.
